Easy Crockpot Recipes
This page has easy to use crockpot recipes that anyone can prepare.  The recipes have very few ingredients and requires little skill to make.  I am a single guy that had no idea how to prepare anything.  The recipes on this page are ones that I have prepared and find tasty even though I have little or no skills in the area of cooking.


Barbeque Meatloaf

2-1/2 lbs. ground chuck
1 can tomato soup, divided
1 egg, slightly beaten
1 cup crushed Ritz crackers
2 tbsp. honey
1 tbsp. plus 2 tsp. Worcestershire sauce, divided
2 tbsp. dried minced onions
1/2 tsp. salt
1/4 tsp. pepper
1/2 cup water
2 tsp. prepared mustard
2 tbsp. brown sugar

Combine ground chuck with half of the tomato soup, egg, crackers, honey, 2 tsp. Worcestershire sauce, onions, salt, and pepper.  Mix well and form into a ball.  Place a crinkled length of aluminum foil in the crockpot so the ends extend an inch or so out of the pot.   Place the meatloaf in the pot (the foil will make it easier to lift the meatloaf out and keep it out of the drippings).

Combine remaining soup, 1 tbsp Worcestershire sauce, the water, mustard, and brown sugar.  Whisk together and pour over the meat loaf.  Cover and cook on low for 8 to 10 hours.

 

Slow Cooker Shipwreck

1-1/2 lbs. ground beef
2 cans (15 oz.) sliced new potatoes, drained
1 can golden mushroom soup
2 tbsp. minced dried onion, or 1 small onion, chopped
1 can cream-style corn
1 cup frozen corn
Salt and pepper, to taste

Brown ground beef and drain grease.  Place 1 can of potatoes in the crockpot (3-1/2 quart or larger); add meat and onion.  Next, layer with corn, then the remaining can of potatoes.   Spoon mushroom soup over the top.  Season with salt and pepper to taste.  Cover and cook on low 6 to 8 hours.

 

Crock Pot Vegetable Soup

1 lb. boneless round steak, cut into 1/2 cubes
1 can diced tomatoes, undrained
3 cups water
2 medium potatoes, peeled and cubed
2 medium onions, diced
3 celery ribs, sliced
2 medium carrots, sliced
3 beef bouillon cubes
1 tsp. McCormick’s All Purpose Seasoning
1/2 tsp. salt
1/8 tsp. pepper
1-1/2 cup frozen mixed vegetables

In slow cooker, combine the first 11 ingredients.  Cover and cook on HIGH for 6 hours.  Add vegetables.   Cover and cook on HIGH for 2 hours longer or until the meat and vegetables are tender.

 

Cowboy Casserole

1 onion, chopped
1-1/2 lbs. ground chuck
6 medium potatoes, sliced
1 can red beans
1 can tomato soup
Salt
Pepper
Garlic

Brown ground chuck and drain grease.  Put chopped onion in the bottom of the crockpot; layer with meat, sliced potatoes, and beans.  Spread tomato soup over all.  Sprinkle with seasonings as desired.  Cover and cook on low for 7 to 9 hours.

 

Cherry Cobbler

2 cans cherry pie filling
1 (18.25-ounce) package yellow cake mix
1/4 cup (1/2 stick) butter, softened to room temperature
1/2 cup chopped nuts
Vanilla ice cream or whipped cream

Pour cherry pie filling into slow cooker, spreading it out evenly.  In large bowl, combine dry cake mix with butter until mixture is crumbly. Sprinkle evenly over cherries. Sprinkle with nuts. Turn slow-cooker on low, cover and cook 3 hours.  Serve hot from slow cooker. Accompany with ice cream or whipped cream.

 

Dessert Delight

1 (21 oz) can cherry or apple pie filling or other flavor - your choice
1 (18-1/4 oz) pkg. yellow cake mix
1/2 cup butter or margarine, melted
1/3 cup pecans or walnuts, chopped (optional)

Place the pie filling into the crock pot. Combine the dry cake mix and melted butter; mix until crumbly then sprinkle over pie filling. Sprinkle the nuts on top. Cover and cook on low for 2 to 3 hours.

 

Easy Broccoli Cheese Casserole

1/2 stick butter or margarine
1 can cream of onion soup or onion soup
1 can cream of mushroom soup
1 c. minute rice
8 oz. jar Cheese Whiz
2 boxes frozen broccoli

Mix all in crockpot and cook for 2 to 3 hours on high.

 

Pot Roast

1 (3 to 3 1/2 lb.) beef rump or chuck roast
1/2 teaspoon salt
1/4 teaspoon seasoned salt
1/4 teaspoon seasoned pepper
1/4 teaspoon paprika (optional)
1 onion chopped, or cut into wedges if you prefer
3-5 carrots, peeled, and cut into 1 inch slices
4-5 potatoes, cut into eighths
1 celery stalk, chopped
1 cup beef broth
3 tablespoons cornstarch
1/4 cup water

Trim visible fat from meat, and rub sides with salt, seasoned salt, pepper, and paprika. Place vegetables in bottom of crock pot. Pour broth on top of vegetables, and place meat on top. Cover and cook on LOW 8-9 hours, or until meat and vegetables are tender. To thicken juices, remove meat and vegetables; keep warm. Turn control to HIGH. Dissolve cornstarch into 1/4 cup of water; stir into and vegetables.

 

Lemonade Chicken

4 pieces chicken
1 can frozen lemonade concentrate -- (6 oz) thawed
2 tablespoons brown sugar
3 tablespoons catsup
1 tablespoon vinegar
2 tablespoons cornstarch
2 tablespoons water

Arrange chicken in crockpot. Combine lemonade, brown sugar, catsup, and vinegar, cornstarch and water.  Pour over chicken and cover.  COOK on HIGH for 3 - 4 hours or LOW for 6 - 8 hours.

 

Creamy Crockpot Potatoes

2 lbs small red potatoes, quartered
2 (8 oz) pkgs. cream cheese, softened
1 can cream of potato soup, undiluted
1 envelope buttermilk ranch salad dressing mix

Place potatoes in bottom of slow cooker. Beat cream cheese, soup and salad dressing, mix. Stir into potatoes. Cover and cook on low for 8 hours.

 

Vegetable Medley

4 cups diced peeled potatoes
1 1/2 cups frozen whole kernel corn OR 1 can (15 1/4 oz) whole kernel corn, drained
4 medium tomatoes, seeded and diced
1 cup sliced carrots
1/2 cup chopped onion
3/4 tsp salt
1/2 tsp sugar
1/2 tsp dill week
1/8 tsp pepper

In a slow cooker, combine all ingredients. Cover and cook on low for 5-6 hours or until vegetables are tender.

 

Yankee Tuna Noodle Pot

2 1/2 cups dry noodles
1 teaspoon salt
1/2 cup finely chopped onion
1 (8-oz.) can peas with liquid
1 can mushrooms, drained
1 can tuna
1/2 teaspoon dry mustard
1 (10-oz.) can cream of mushroom soup
1/2 soup can water
1/2 cup hulled sunflower seeds or chopped cashews

Put all ingredients in Crock-Pot in order listed. Cover and cook on low for 6-8 hours, or on high 2-3 hours.

 

Poached Salmon

1-pound salmon fillet
3/4 cup orange juice or apple cider
2 tablespoons soy sauce
1 clove garlic, minced

Place the salmon fillet in the slow cooker. Add the juice or cider; sprinkle with the soy sauce and the garlic. Cover and cook on low heat for 2 hours. Serve warm with sauce spooned over top.
